I’m looking forward to meeting you next Wednesday for a crash course in making gyozas.

Japan Centre are kindly providing the ingredients and I’ll be providing the tuition so all you need to do is turn up to class on time.

 
 

About gyozas

About half way on the Shinkansen line between Tokyo and Osaka is Hamamatsu, a renowned “Gyoza town”.

Virtually every culture across the world has its own version of a dumpling, from Cornish pasties to empanadas.

Gyozas originated in China, but have won a special place in the hearts and minds of Japanese and are a guaranteed crowd pleaser on any menu.

What to expect

Koj will teach you how to make a filling, how to pleat and crimp the edges, how to cook them and how to make a dipping sauce.

DO

Read the recipe through in advance and make sure you have all the ingredients and equipment.

DON’T

Stress - it’s meant to be fun! If (when) things go wrong, I’ll help you fix them!

Gyoza skin wrappers
Pork mince*
White cabbage
Garlic
Ginger
Spring onion
Soy sauce
Rice vinegar
Sesame oil
Togarashi
Salt and pepper
Potato flour (katakuriko)
Sugar (optional)

Pescetarian - 100g raw prawns
Vegan - 75g chestnut mushrooms + 25g firm tofu
