I have written a menu that replicates (and hopefully brings memories of) a meal at my restaurant, Koj Cheltenham.
These are also all dishes that are in my book, so I hope that I will help bring them to life and you can reproduce them when you are able to celebrate future events with more people.
I will bring all ingredients, enough to feed your family of four.

Pork belly - we will slow cook this in soy, mirin, garlic and ginger
Gyozas - we will make the filling, pleat, cook and make a spicy dipping sauce
Beef tataki - we will make an onion ponzu sauce, which is very versatile
Black cod - we will slice the black cod and marinate it in the saikyo miso marinade
Side dishes - almost all Japanese meals are served with rice, soup and pickles. We will focus on the key basics of cooking Japanese rice and making a dashi stock which will be the basis of miso soup. As we do not have time to make long, fermented pickles, we will do an ‘instant’ pickle with cucumber and seaweed.
