Any 'naturally brewed' Japanese soy sauce will do, preferably 'dark soy sauce'.Peanut butter. You can use crunchy or smooth, depending on preference, but I do prefer to use peanut butter that does not contain palm oil. If the ingredients feature nothing but 100% peanuts, that’s a good sign. Recommended brands are Meridian, Whole Earth and Clearspring.Dietary requirementsPlease let me know if you have any dietary requirements as we can tailor the recipes. For example, dashi usually contains fish but there is a vegan alternative called kombu dashi, which is made with kelp seaweed.If you can't find dashi, you could use vegetable stock or, at a push, water.Clearspring has a useful guide to types of soy sauce. Look for tamari if you want a gluten free soy sauce.Pork is traditional for mabodofu, but you could substitute beef, lamb, turkey or soya protein mince (dried or frozen).AlcoholMy recipes will often call for my own Japanese -inspired gin, Kojin, but it is currently out of production.
