About the menus
I will bring a small konro BBQ with me and each of the courses on Tuesday’s dinner menu will feature something that has been cooked over bincho charcoal, including dessert, which may be ‘cooked’ and assembled by the dinner guests themselves, to conclude the evening in an informal and convivial style.
My presentation for special occasion dinners is Western plating style, to suit the crockery of my clients even if many of my ingredients and flavours are distinctively Japanese.
